I made these cookies for my recent Cookie Exchange as they are a favorite of mine - plus they make a good size batch of at least 5 dozen.
Oatmeal Peanut Butter & Chocolate Chunk Cookies
3/4 C. butter, softened
3/4 C. peanut butter (I used chunky but you can use whichever)
1 1/4 C. brown sugar, packed
1 1/4 C. sugar (regular granulated)
1 1/2 tsp. baking powder
1/2 tsp. baking soda
3 eggs
1 1/2 tsp. vanilla
2 1/4 C. flour (all-purpose)
2 2/3 C. rolled oats (I used Quaker Old Fashion)
1 - 10 oz. pkg. miniature milk chocolate kisses
Beat butter and peanut butter in a large mixing bowl with an electric mixer on medium to high speed for 30 seconds. Add granulated sugar, brown sugar, baking powder, & baking soda. Beat until combined, scraping bowl occasionally. Beat in eggs and vanilla until combined. Beat in flour. Stir in rolled oats with a wooden spoon. Stir in chocolate kisses. Drop dough from tablespoon onto cookie sheet (I always cover mine with parchment paper). I fit about a dozen on one cookie sheet. Bake at 350 degrees for 8-10 minutes or until edges are lightly brown.

You had me at peanut butter and then at oats then at chocolate chunks. I will totally be making these in the next week.
these look so good and peanut butter and oatmeal are considered health food in my house! can't wait to make 'em!
