A Different Kind of Chicken Salad
This is a favorite of ours! I don't serve this as a dinner meal, but we prefer to have it for lunch (Mr. Cardigan packs it in a covered container and I enjoy in a salad bowl) or maybe as an addition to a sandwich meal.
Chicken Salad
4 cooked & shredded chicken breasts
1 pkg. of cole slaw mix
2 cans sliced water chestnuts, drained
1 bunch green onions, sliced or chopped
1/2 C. slivered almonds
2 T. sesame seeds
2 pkgs. Ramen Chicken Noodles (cook according to directions except save the seasoning for the dressing - chop the noodles when cool)
Mix all this together in a very large bowl.
Dressing -
1/2 C. white rice vinegar
2 pkgs. seasoning (from the noodle mix)
1 C. oil
2 T. sugar
1 tsp. salt
dash of pepper
Using a whisk - mix this all together.
Pour the dressing over the salad mixture and mix well. Refrigerate for at least 3 hours.
Here is just the cole slaw mix in the bowl -
Now, the chicken, water chestnuts & green onions are added -

The pic at the beginning of this blog post is the dressing mixed in the salad. I can't wait til I can try it!! Mr. Cardigan will be surprised to have some to take in his lunch!!!!
