Pasta Salad

We love this cold pasta salad!!!

















Pasta Salad

2 - 12 oz. boxes/bags of tri-color spiral pasta
24 oz. Wishbone Sweet-Spicy French dressing
2 cucumbers, chopped
2 tomatoes, chopped
2 green peppers, chopped
2 carrots, chopped
8 oz. cheddar cheese (chunks/cubed)
2 T. wine vinegar
2 T. olive oil
2 T. sugar
dashes salt & pepper

Cook pasta according to package directions.  Cool.  Then, add the chopped vegetables. Mix together.   Next, add the spicy french dressing to the pasta dish.  Mix the wine vinegar, olive oil, sugar, and salt & pepper in a small bowl.  Then, add to the pasta mixture.  Mix all together.

Refrigerate for several hours or overnight.  Add the cheese cubes prior to serving and mix in.

This makes a large amount and is great to serve at a party or to take to a potluck.  It keeps well all week long - as Mr. Cardigan enjoyed it in his lunch all week!!

















Lucy is 2 years old now and for the first 1 3/4 years of her life she enjoyed sleeping on top of our couch.  Enough so that it still sags - because if you have seen Lucy in person you know that she is (ahem!!) pretty fluffy!!!!!  She has taken to other spots to sleep - like my computer chair at night!!  But, here she is when she used to be on the couch.  Can you see why she changed spots?  I don't see how she fit all up there!!
