Banana Bread

I have been making this Banana Bread for 40 years!!!  This is the recipe (out of everything I have) that I have been making the longest.  I don't even remember where I got the recipe!!

Banana Bread

1/2 shortening (I use Crisco)
1 C. sugar
2 eggs
3 crushed bananas
2 C. flour
1/2 tsp. salt
1 tsp. baking soda
1/2 C. chopped walnuts

Mix all together in the order given.  Put into loaf pans that have been sprayed with Pam (or similarly greased).  Bake at 350 degrees for 35-45 minutes or until done.  Test by putting a toothpick in the center and if itcomes out clean then it is done.

I always make these in 2 small loaf pans.  After they have cooled a little in the pans I invert them on a cutting board to cool.  Then, I wrap in aluminum foil.  These are very moist and are great spread with butter!!

The Crisco, eggs and sugar mixed together on the right and the mashed bananas on the left -

Everything all mixed together -

It's so easy to mix together that I don't even use my KitchenAid for this.  Here are the loaves fresh from the oven and still in their pans -

As you know I really love our Lucy - and she really loves her toy mice!!!!
