TOLL HOUSE CHOCOLATE CHIP PIE

Yesterday was National Pie Day (as opposed to National Pi Day later in March) and I tried a new pie recipe -- Toll House Chocolate Chip Pie.  This is a winner!  Maybe make it for your sweetie for Valentine's Day, too!!



















Toll House Chocolate Chip Pie

1 unbaked pie shell
2 eggs
1/2 C. flour
1/2 C. sugar
1/2 C. packed light brown sugar
3/4 C. butter (1 1/2 sticks), softened
1 C. semi-sweet chocolate chips
1 C. chopped walnuts

Ice Cream

Preheat oven to 325 degrees.  Place pie crust in pie dish.  Set aside.

In a mixing bowl, beat eggs on high speed until light & foamy.  Add flour & both sugars and mix until combined.  Add softened butter and mix thoroughly.

Stir in chocolate chips & walnuts until evenly mixed.  Spoon the batter into the unbaked pie crust.  Bake for 50-60 minutes - until knife inserted comes out clean.  Cool at least 30 minutes before serving.  

Great served with ice cream.

January is just one of those months where it takes a lot for me to get moving!  I absolutely hate putting away all my Christmas decorations.  I have set until the end of the month to be finished & it looks like I'm on track.  The Valentine totes are in the house staring at me.  This is my motivation -- decorating for Valentine's Day!  Anyway, Mr. Cardigan has always put away (& put out) the Christmas glasses/dishes.  That is his foot in the photo, but you have to love that Lucy is just laying on the paper used to pack the dishes away.  She loves to play or hide in that stuff!!
