A very easy meal that just warms you up!!!
Spinach Fandango
2 boxes frozen chopped spinach
1 lb. ground beef
1 medium onion, chopped
1 can cream of celery soup
1 small can of mushrooms, drained
1/2 C. Minute Rice, uncooked
8 oz. sour cream
Dash of garlic powder
salt & pepper
Velveeta Cheese
Thaw spinach and drain excess water. Brown ground beef with onion. Drain any grease. Add remaining ingredients (except Velveeta). Mix well and place in a casserole dish. Cover entire casserole with slices of Velveeta Cheese. Bake at 350 degrees for 30 minutes.

This is a very easy dish to make and would come in handy during this busy holiday month!!
I caught Lucy recently as she was "inspecting" the holiday decoration boxes and totes --
She looks like she is saying "What????" But, seriously, last night I caught her batting a little yarn snowman that she took off our main tree and playing with it like she does her toy mice!!!!!
