Chocolate Chip Pumpkin Muffins

These are soooooo good!!!!


















Chocolate Chip Pumpkin Muffins

1 C. canned pumpkin
2 eggs
1/2 C. water
1/2 C. butter, melted (let it sit for a couple minutes so it's not hot)
1 3/4 C. flour
1/4 tsp. salt
1 1/3 C. sugar
1 tsp. baking soda
1/4 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. ginger
1/4 tsp. ground cloves
1 1/4 C. chocolate chips

In a large bowl (I used my KitchenAid) mix together pumpkin, eggs, water & melted butter until combined.  In a separate bowl combine flour, salt, sugar, baking soda, baking powder, cinnamon, nutmeg, ginger & cloves.  Add these dry ingredients to the pumpkin mixture just until combined.  Stir in the chocolate chips.

I used cupcake liners for these.  They don't raise much so I filled about 2/3 full.  I also sprinkled about 4 chocolate chips on top of each prior to baking.  Bake at 350 degrees for approx. 30 minutes - use the toothpick to test.  

This made approx 24 cupcakes.

Lucy loves everything about the holidays!  She's a seasonal addict like me!!  The cooking/baking excites her because she thinks it might involve a treat!  She loves when we bring in the new decorations because there are new scents to drive her crazy!!  Lucy loves to explore these totes once they are opened and hopes there is room for her to jump in and explore better.  Plus some of these decorations are downright tempting for her to play.  But, each year she is better & better at tolerating/ignoring them!  Plus I've learned to keep temptation up high!!  Keep those holidays coming!!!
