Wild Rice & Chicken Casserole

A pretty easy dish to put together & yummy, too!!

WILD RICE & CHICKEN CASSEROLE

1 box Uncle Ben's Long Grain & Wild Rice
1 - cream of mushroom soup
2 C. cooked chicken, diced
1 1/2 C/ frozen mixed vegetables
1/2 C. milk
1 T. butter
1/2 onion, diced
1/2 stalk celery, diced
dashes of salt & pepper
5 slices Swiss Cheese

Cook box of rice according to the directions on the box.  In a separate pan, melt the butter and saute the onion & celery until softened.  In a bowl, put the cooked rice into it -- then add cream of mushroom soup, vegetables, chicken, milk, onion & celery, and salt/pepper.  Mix.  Put into casserole dish that has been sprayed with cooking spray.  Top with the cheese slices.  Cover with foil and bake at 300 degrees for about 45 minutes.

Now, Lucy is not a very affectionate cat at all.  But, somehow Lucy & Mr. Cardigan seemed to have bonded over that lazy boy!!!  I would give anything for her to sit on my lap and let me pet her!!  And, this doesn't happen often either so I was lucky to get this photo!
