Smashed Potatoes

Smashed Potatoes

Small round potatoes (I used red ones & use as many as you will need)
olive oil
kosher salt
pepper
rosemary (or other herbs of your choosing)

Bring a pot of salted water to a boil.  Add in as many potatoes as you want and cook them to fork-tender.  When ready - drain.

On a cookie sheet - drizzle olive oil to keep your potatoes from sticking.  Place the potatoes on the cookie sheet.  With a potato masher - press down gently one way and then the other way.

Put some olive oil in a small cup/dish and brush the olive oil over each potato - making sure pretty much all of the top is coated.  Sprinkle kosher salt, pepper & rosemary on top of each oil-coated potato.  Bake at a preheated 450 degree oven for 20-25 minutes.

Notes:  I found this on Pinterest but it is from Pioneer Woman.  Hers looked better than mine, but I think they tasted the same!!  I made a lot of these and they are good as leftovers heated in the microwave.

I had loaded up the sheet, but you can do as little of these potatoes as you want.  Now, the olive oil has been brushed on and the spices sprinkled -

This night I served them with a Crockpot Roast and broccoli & cheese.  Now, Lucy was not interested in this meal.  She was more concerned with the mail that came for her that day.  She got a free sample of some dry cat food and was very pleased with the mailman!!
