This is my 'go to' dish when I have a 2 lb. pkg. of ground beef in the freezer - because I always have everything else to make it --
The glaze on top really adds to the flavor - so give this a try!!
GLAZED MEATLOAF
2 eggs, beaten
2/3 C. milk
dashes of salt & pepper
3 slices of bread, cut in small cubes
2 lbs. ground beef
1/2 C. chopped onions
Glaze:
1/4 C. brown sugar
1/4 C. ketchup
1 T. prepared mustard
In a large bowl - stir together the eggs, milk, bread, and salt & pepper. I like to then let it soak for about 5 minutes. Then, beat until the bread is broken up. Add the onion and ground beef. Mix it well. Form it into a loaf and put in baking dish. Bake at 350 degrees for 1 hr. 15 minutes.
Next, combine the ingredients for the glaze. Spread over the top of the meatloaf. Bake for an additional 15 minutes.
While I have the oven in use I usually make either baked potatoes or scalloped potatoes to go with this - baking them mostly at the same time.

Now, Lucy has been doing a little hibernating lately. She had her paws just like a little rabbit, but by the time I took the picture - she moved the one to her face. You have to imagine - ha!!

You know, I made this last night for dinner, with the same exact glaze! And I thought it was my original recipe!! LOL I was craving homemade comfort food, and meat loaf is just that. xo
