Banana Cupcakes

These are soooo good!!!

















Banana Cupcakes

1/2 C. shortening (I use Crisco)
1 1/2 C. sugar
2 eggs
2 C. flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 1/2 ripe bananas
3/4 C. buttermilk
1 1/2 tsp. vanilla

Cream sugar and shortening together.  Add eggs.  Stir together flour, baking soda, baking powder, & salt and add to creamed mixture.  In a separate bowl - mash the bananas with the buttermilk and vanilla.  Then, add to the batter and mix.  Fill cupcake liners 3/4 full and bake at 350 degrees for 15-20 minutes. 

Frost as you wish.  I use Duncan Hines vanilla frosting.  This recipe makes 12-18 cupcakes depending on the cupcake pan/liner size.  These are very moist and easy to whip up!!
