Spinach Fandango - Easy Dinner
A very easy meal that just warms you up!!!
2 boxes frozen chopped spinach
1 lb. ground beef
1 medium onion, chopped
1 can cream of celery soup
1 small can of mushrooms, drained
1/2 C. Minute Rice, uncooked
8 oz. sour cream
Dash of garlic powder
salt & pepper
Thaw spinach and drain excess water. Brown ground beef with onion. Drain any grease. Add remaining ingredients (except Velveeta). Mix well and place in a casserole dish. Cover entire casserole with slices of Velveeta Cheese. Bake at 350 degrees for 30 minutes.
Here it is all mixed in a bowl prior to putting in casserole dish --
Just after removing from oven --
This is a very easy dish to make and would come in handy during this busy holiday month!!
I caught Lucy recently as she was "inspecting" the holiday decoration boxes and totes --
She looks like she is saying "What????" But, seriously, last night I caught her batting a little yarn snowman that she took off our main tree and playing with it like she does her toy mice!!!!!

Here are some of my current "loves" (besides blogs): decorating for all holidays, crafting, cooking and baking, traveling, shopping, some reality shows, Dancing with the Stars, Real Housewives, getting together with my "YaYa" girlfriends, and most of all My Family!!
