Pork Chop Casserole

One of my favorite ways to make pork chops.

Pork Chop Casserole

3/4 C. flour
salt & pepper
6 pork chops
2 T. cooking oil
1 can cream of mushroom soup
2/3 C. chicken broth
1/2 tsp. ground ginger
1/4 tsp. rosemary, crushed
1 C. sour cream, divided
1 can (2.8 oz.) French Fried Onions, divided

In a shallow bowl - combine the flour and salt and pepper.  Heat oil in a large skillet.  Dredge the pork chops (one at a time) in the flour mixture and cook the pork chops in the hot oil for 4-5 minutes on each side or until browned.  Place the pork chops in a single layer in a 13 x 9 baking dish.  In a bowl, combine the cream of mushroom soup, chicken broth, ginger, rosemary and 1/2 cup of sour cream.  Pour over the pork chops.  Then, sprinkle with half of the french fried onions.  Cover and bake at 350 degrees for 45-50 minutes.  Stir the remaining sour cream into the sauce and top with remaining onions and bake for an additional 10 minutes - uncovered.

Here are some photos.  Cooking the pork chops in the hot oil -

This is my favorite photo of Lucy!  I think it is because I love when she sits over the couch like this - it's like she is just hanging out and visiting --

I love this pic of Lucy - she is such a character!

No Easter decor around my home unfortunately. When I say that it is like living in a building site due to all of the renovations, I am NOT joking!!
