Fresh Peach Cobbler
1/2 C. sugar
1 T. cornstarch
1/4 tsp. cinnamon
4 C. sliced fresh peaches
1 tsp. lemon juice
3 T. shortening or Crisco
1 C. flour
1 T. sugar
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 C. milk
Cool Whip or whipping cream, if you desire
Preheat oven to 375 degrees.
Mix 1/2 cup sugar, cornstarch, & cinnamon in a 2 qt. saucepan. Stir in peaches and lemon juice. Cook over medium heat stirring constantly until mixture thickens and boils. Boil and stir for 1 minute. Pour into an ungreased 2 qt. casserole.
Cut shortening into flour, 1 T. sugar, baking powder & salt in a bowl like you would for a pie crust - until mixture looks like fine crumbs. Stir in milk.
Drop by spoonfuls onto peach mixture. Bake for 25-30 minutes or until topping is golden brown.
Serve either warm or cool. If you desire you can serve with a whipping cream or ice cream.
Note - Mr. Cardigan thought that it needed more peaches. Next time I am going to add 1-2 cups more of peaches, but keep all the other ingredients the same. I think there is enough liquid as the peaches contribute to the liquid, too.
Very tasty and the kitchen smelled so good while it was baking - peaches and cinnamon are a great combo!!
