Baked Potato Wedges

I love to make these Baked Potato Wedges to go with a sandwich (like sloppy joes, etc.) for dinner --
















Baked Potato Wedges


6 baking potatoes, cleaned & quartered
1/3 C. butter
1/2 C. flour
1/2 C. Parmesan cheese
dashes of salt & pepper

Preheat oven to 350 degrees.  While the oven is heating -- put the butter in the baking dish you will use and let it melt (being sure to keep an eye so it doesn't brown).  Clean your potatoes and cut them in half - then in half again (ending up with quarters).  By then you will have taken the pan with the melted butter out of the oven.  Put the flour, Parmesan cheese, salt & pepper in a gallon Ziploc bag and mix well.  I then do about 4 potato quarters at a time - getting them wet by running them under water and dropping them in the flour mixture in the bag.  I then shake the 4 quarters good and put them on top of the melted butter.  Continue until all the potato quarter strips are done.

Put them in the 350 degree oven for one hour - turning them half way thru.

I like to eat mine with some sour cream - but Mr. Cardigan prefers them plain.  Enjoy!!
















When I vacuum -- Lucy runs and jumps on top of the washing machine.  That must be her 'safe place'.  I guess she got tired a waiting for the vacuum to be put away so she curled up in the basket on top of the dryer --

Oh yes, these are a family favorite in our house. I sprinkle them with all kinds of tasty combinations. I love the photo of your Lucy. My Misty hides between the couch and loveseat when I pull out the vacuum. She peeks around the corner and keeps me in her sight at all times. So cute. Have a great weekend.
